175g pitted dates
100g dried prunes
350g dried fruit mix
120g dried cranberries
grated rind of 1 lemon
grated rind of 1 orange
200ml unsweetened orange juice
2 tablespoons treacle
4 tablespoons brandy
3 large eggs, separated
255g self raising flour
1 tbsp mixed spice
2 tbsp apricot jam
Preperation and Cooking
Gather your ingredients together
Preheat oven to 170°C, 325°F, gas mark 3
In a saucepan boil and simmer gently for 8 minutes the dates, prunes and orange juice until soft and the juice is absorbed. Leave to stand to cool
In a food processor add the treacle, brandy, lemon rind, orange rind and the egg yolks with the cold mixture. Blend for a few moments until a smooth consistency, transfer the mixture to a large bowl. Sieve in the flour, spices and fold in the with a large spoon along with dried fruit and cranberries.
Add the mixture to a greased and lined deep cake tin and smooth over the top
Bake in the oven for 1 hour
Leave to cool in tin
Remove the cake from the tin carefully, remove the lining paper and turn upside onto a wire cake board
Turn the cake upside down and apply jam to base and sides
Lightly dust with icing sugar, roll out the icing and cover the cake, cut edges to neaten and leave overnight
